Chocolate Pavé
Beetroot & chocolate??? Who would’ve thought they pair so well? Well they do! A classic chocolate pavé sat on a light chocolate genoise sponge and topped with a shiny chocolate mirror glaze , this is paired with a crunchy chocolate crisp , candied beetroot gel , golden beetroot sorbet and beetroot sherbet , the chocolate pavé is light , creamy, rich and soft in texture. This plays well with a earthy yet sweet golden beetroot sorbet, the chocolate crisp gives it that crunchy texture that it certainly needs and to finish off a beetroot sherbet to give you that nostalgic feeling from your childhood. Simply delicious!
