Pina Colada
Who doesn’t love a Pina colada? At some point in any chefs career there comes a question of; “what can I make that’s vegan and different to the rest?” Especially a dessert! Well here is a dish that is guaranteed to make any vegans jaw drop; compressed vanilla and lime pineapple , a pineapple , yuzu & chilli salsa served with a Pina colada sorbet. Here I marinated my pineapple in a vanilla and lime syrup then I compressed it in a vacuum chamber and then gave it a little water bath to soften , using the off cuts from the pineapple I mixed it with finely diced chilli , yuzu juice, sugar, chopped mint and coriander then I simple chopped up any remaining pineapple mixed it with coconut milk , lime juice, rum and sugar and churned in a ice cream machine , done!
